Spartan Sub Sandwich

Ingredients

  • 1 Package of ReadyCarved Gyros Slices, roughly chopped
  • 4 Cups Baby Spinach Leaves
  • 3 Sub Rolls
  • 3 oz Red Onions (about a half of an onion)
  • 6 Slices Mozzarella Cheese
  • 3 Cups Sour Cream
  • 1 1/2 Cups Mayo
  • 3/4 Cup Sun Dried Tomatoes
  • 3 Tbs. Red Wine Vinegar

Preparation

Serves 3

  1. Preheat oven to 350° F.
  2. Cook gyro slices according to packaging directions. Set aside.
  3. Combine greek yogurt, mayo, sun-dried tomatoes and red wine vinegar in a food processor until well blended. Set aside.
  4. Toast the sub roll.
  5. Add the gyro slices and spinach. Add the Mozzarella cheese and bake at 350° F until melted.
  6. Add the pickled onions and sun-dried tomato dressing mixture from food processor.
