Spartan Sub Sandwich
Ingredients
1 Package of ReadyCarved Gyros Slices, roughly chopped
4 Cups Baby Spinach Leaves
3 Sub Rolls
3 oz Red Onions (about a half of an onion)
6 Slices Mozzarella Cheese
3 Cups Sour Cream
1 1/2 Cups Mayo
3/4 Cup Sun Dried Tomatoes
3 Tbs. Red Wine Vinegar
Preparation
Serves 3
Preheat oven to 350° F.
Cook gyro slices according to packaging directions. Set aside.
Combine greek yogurt, mayo, sun-dried tomatoes and red wine vinegar in a food processor until well blended. Set aside.
Toast the sub roll.
Add the gyro slices and spinach. Add the Mozzarella cheese and bake at 350° F until melted.
Add the pickled onions and sun-dried tomato dressing mixture from food processor.
