Mediterranean Chicken Panini with Creamy Whipped Feta Cheese Spread


  • 8 slices sourdough bread
  • 4 Tbsp. salted butter, softened
  • 4 Tbsp. whipped feta (see recipe below)
  • 2 Cups packed fresh spinach leaves
  • 2 Cups ReadyCarved™ Mediterranean Chicken slices
  • 2 sweet red peppers (roasted, drained, and cut into strips)
  • 1/2 Cup jarred artichokes (drained and roughly chopped)
  • 4 Tbsp. mayonnaise
Creamy Whipped Feta Cheese Spread
  • 1 Cup crumbled feta
  • 1/2 Cup Greek yogurt
  • 2 Tsp. lemon zest
  • Pinch of salt


Serves Four
Total cook time: 20 minutes

  1. Make creamy whipped feta cheese spread by combining all listed ingredients in a food processor until well blended. Set aside.
  2. Spread each slice of bread with 1/2 tablespoon butter.
  3. Flip over bread and spread 4 slices of bread with 1 tablespoon each of the whipped feta.
  4. Top each of the whipped feta with 1/2 cup of spinach, 1/2 cup ReadyCarved™ fully cooked chicken slices, 1/4 of the roasted red peppers, and 1 tablespoon artichokes.
  5. Spread the other 4 slices of bread with 1/2 tablespoon each of mayo and place on top of the sandwiches, mayo side down.
  6. Place sandwiches on hot press or grill and cook about 6 minutes until bread is toasted (if using a grill pan, cook for 2-3 minutes each side, weighing the sandwich down while cooking)
