- Cook eggs to sunny side up in skillet. Set aside.
- Sautee gyro slices in skillet (following packaging directions). Once cooked add tomatoes, onions, and baby spinach and cook down. (Approx 3-4 minutes)
- Add sauteèd potatoes and gyros slices to skillet and combine
- Sprinkle on feta cheese crumbles and place prepared eggs on top.
- Add salt and pepper to taste.
