Preheat your oven to 425°F with a pizza stone inside.
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and sauté, stirring often, until evenly caramelized (7-10 minutes).
Reduce the heat and add the garlic. Cook for an additional 2-3 minutes, stirring occasionally. Stir in the rosemary and 1 tablespoon of the chives.
In another large skillet, over medium-high heat, cook the ReadyCarved Gyro Slices until they start to darken and become slightly crispy (several minutes). Remove from heat and drain the cooked meat.
To prepare the pizza, top the par-baked crust with the caramelized onions, cooked gyro slices, crumbled goat cheese or shredded Fontina cheese, grated Parmesan or Asiago cheese, the remaining chives, and freshly cracked black pepper.
Bake the pizza on the preheated pizza stone in the oven for 8-10 minutes, or until the cheese is melted and bubbly.
Remove from oven and let stand for 5 minutes before cutting and serving. Enjoy!
