Greek Isle Salad

Ingredients

  • 1 Package of Opaa! ReadyCarved Gyro Slices
  • 4 Kronos Pita Bread, Grilled & Quartered
  • 8 Tbsp Diced Tomatoes (about 2 medium tomatoes)
  • 8 Cups Baby Spinach Leaves
  • 8 Tbsp Red Onions, Thin Slices (about 2 medium red onions)
  • 8 Tbsp Roasted Chickpeas
  • 1/2 Cup Pepitas, roasted and salted
  • 1/2 tsp Oregano, Dried, crumbled finely
  • 1/8 tsp Ground Black Pepper
  • 4 oz Plain Greek Yogurt
  • 1 1/2 Tbsp Lemon Juice
  • 1 1/2 Tbsp Lemon Zest

Preparation

Serves 4

  1. Heat gyro slices according to package directions. Set aside.
  2. Mix greek yogurt, lemon juice and lemon zest in small bowl. Set aside.
  3. Mix pepitas, oregano, and black pepper in large salad bowl.
  4. Add baby spinach, heated gyros slices, tomatoes, red onions, and spiced chickpeas. Gently mix well.
  5. Drizzle salad with Lemon Greek Yogurt Dressing and garnish with grilled pita wedges.
