Ancient Greek Grains Bowl

Ingredients

  • One Package (12oz) Opaa! ReadyCarved Gyros Slices
  • 1 cup quinoa
  • 1 cup farro
  • 1 cup couscous
  • 4 tbsp feta cheese crumbles
  • 8 tbsp diced cucumber
  • 8 tbsp sliced black olives
  • 4 tbsp diced white onion
  • 2 cups marinated kale (recipe follows)
  • 8 tbsp quartered cherry tomatoes
  • 8 tbsp lemon Greek Yogurt dressing (recipe follows)

Marinated Kale

  • 4 cups kale, green, roughly chopped
  • 1/2 cup champagne vinegar
  • 1/4 cup extra virgin olive oil
  • 1.5 tsp salt, kosher
  • 1/2 tsp red pepper flakes
  • 1/8 tsp black pepper

Lemon Greek Yogurt Dressing

  • 8 oz (1 cup) Greek yogurt
  • 2 tbsp lemon juice
  • 2 tbsp extra virgin olive oil
  • Salt and black pepper, to taste

Preparation

Serves 4

Marinated Kale
Note: Marinate A Day Ahead

  1. In a medium bowl, combine the kale, champagne vinegar, extra virgin olive oil, salt, red pepper flakes, and black pepper.
  2. Massage the marinade into the kale leaves.
  3. Cover and refrigerate overnight.

Ancient Greek Grains Bowl:

  1. In a medium bowl, combine the quinoa, farro, and couscous.
  2. Top with marinated kale, olives, onions, cucumber, tomatoes, and crumbled feta cheese.
  3. Place heated gyros slices on top.
  4. Drizzle with lemon Greek Yogurt dressing.

Lemon Greek Yogurt Dressing:

  1. In a mixing bowl, combine the Greek yogurt, lemon juice, extra virgin olive oil, salt, and black pepper.
  2. Whisk until well combined.
  3. Store in the refrigerator until use. Yields 8 oz (1 cup).
