Make the Avocado Crema by combining the avocados, sour cream, 2 tablespoons of lime juice, and salt in a blender or food processor. Process until well blended, about 1-2 minutes. Taste for seasoning. Set aside
In a small skillet over medium heat, warm the black beans for 2-3 minutes. Transfer to a plate and keep warm.
Add the ReadyCarved™ fully cooked Pork Al Pastor slices to the same skillet and warm through, about 1-2 minutes.
Toss the cooked white rice with 4 tablespoons of lime juice.
Divide the rice into 4 bowls. Top each bowl with al pastor pork, black beans, diced tomatoes, diced mango, and cilantro.
Drizzle each bowl with the Avocado Crema and the remaining 2 tablespoons of lime juice.
