Mediterranean Chicken Salad Cups


2 tablespoons GDF Traditional Hummus (#4390)
2 tablespoons GDF Greek Yogurt or Substitute
1 ½ tablespoons fresh lemon juice
3 oz. rotisserie cooked chicken
½ minced shallot
1 teaspoons crumbled feta cheese
1 teaspoon chopped tomato
1 teaspoon sliced olives
3-4 ea Butter Lettuce Cups


Mix hummus with Greek yogurt and season with lemon juice to taste. Toss with minced shallot, shredded rotisserie chicken, crumbled feta, chopped tomato, and sliced olives. Spoon into lettuce cups. Sprinkle with chopped fresh dill and parsley.
