Greek Isle Salad


2.5 oz  Gyros Slices

2 tbl Diced Tomatoes

2 cups Baby Spinach Leaves

2 tbl Red Onions, Thin Slices

2 tbl Spiced Roasted Chickpeas

1 tbl Greek Spiced Pepitas (*sub-recipe)

2 tbl Lemon Greek Yogurt Dressing (*sub-recipe)

1 Kronos 6” Pita Bread, Grilled & Quartered

1 cup Pepitas, roasted and salted

1 tsp Oregano, Dried, crumbled finely

¼ tsp Ground Black Pepper

8 oz Greek Yogurt

1 tbl Lemon Juice

1 tbl Lemon Zest


Toss pepitas with seasoning until evenly coated. In a salad bowl, layer baby spinach, heated gyros slices, tomatoes, red onions, spiced chickpeas and pepitas. Drizzle salad with Lemon Greek Yogurt Dressing and garnish with grilled pita wedges.

Yield: 1 Serving

Lemon Greek Yogurt Dressing

In a mixing bowl, combine all ingredients and whisk to combine. Store refrigerated until use.

Yield: 8 oz (1 cup)
