- Massage the marinade into the kale leaves.
- Cover and refrigerate overnight.
Ancient Greek Grains Bowl:
- In a medium bowl, combine the quinoa, farro, and couscous.
- Top with marinated kale, olives, onions, cucumber, tomatoes, and crumbled feta cheese.
- Place heated gyros slices on top.
- Drizzle with lemon Greek Yogurt dressing.
Lemon Greek Yogurt Dressing:
- In a mixing bowl, combine the Greek yogurt, lemon juice, extra virgin olive oil, salt, and black pepper.
- Whisk until well combined.
- Store in the refrigerator until use. Yields 8 oz (1 cup).
