Ancient Greek Grains Bowl


2.5 oz ReadyCarved Gyros Slices

¼ cup quinoa

¼ cup farro

¼ cup couscous

1 tbsp. feta cheese crumbles

2 tbsp. diced cucumbers

2 tbsp. sliced black olives

1 tbsp. diced white onions

½ cup marinated kale (*sub-recipe)

2 tbsp. quartered cherry tomatoes

2 tbsp. lemon Greek Yogurt dressing (*sub-recipe)

1/2 cup champagne vinegar

1/4 cup extra virgin olive oil

1.5 tsp. salt, kosher

½ tsp. red pepper flakes

1/8 tsp. black pepper

4 cup kale, green, roughly chopped


Marinated Kale

  1. Combine all ingredients in a medium bowl.
  2. Massage marinade into leaves of kale.
  3. Refrigerate covered, overnight.

Yield: 8 servings

Ancient Greek Grains Bowl

  1. In a medium bowl combine quinoa, farro and couscous.
  2. Top with marinated kale, olives, onions, cucumbers, tomatoes and crumbled feta cheese.
  3. Place heated gyros slices on top.
  4. Drizzle with lemon Greek Yogurt dressing.

Yield: 1 Serving

Lemon Greek Yogurt Dressing 

  1. In a mixing bowl, combine all ingredients and whisk to combine.
  2. Store refrigerated until use.

Yield: 8 oz (1 cup)
