Al Pastor Taco Salad


1.5 cups ReadyCarved Al Pastor
1/4 cup olive oil
1/4 cup fresh lime juice
1/4 cup chopped fresh cilantro
1 tsp. minced canned chipotle chiles in adobo sauce
1/2 large avocado, halved, seeded, cut into 1/2-inch cubes
1/2 large red bell pepper, cut into 1/2-inch pieces
1/4 cup diced sweet onion
1 head chopped romaine lettuce heart
2 tostada crowns (bowls) or 4 taco shells


  1. Whisk together olive oil, lime juice, cilantro, and chipotle chiles in large bowl. Season dressing to taste with salt and pepper.
  2. Add ReadyCarved Al Pastor, avocado, bell pepper, and onion to dressing.
  3. Layer chopped romaine lettuce in tostada crowns or taco shells. Toss to coat.
  4. Divide mixture evenly over the tostada crowns or taco shells.
